Preparation
- Place the chicken in the slow cooker.
- In a bowl, mix soy sauce, brown sugar, honey, garlic, and ginger. Pour the mixture over the chicken.
Cooking
- Cover and cook on low for 4-6 hours or high for 2-3 hours.
- Once cooked, remove the chicken and shred it.
- Mix cornstarch and water in a small bowl, then stir it into the sauce in the slow cooker.
- Cook on high for an additional 15-30 minutes to thicken the sauce.
- Return the shredded chicken to the sauce and mix well.
Serving
- Serve over rice and garnish with sesame seeds and green onions.
Notes
For added flavor, consider marinating the chicken in the soy sauce mixture for a couple of hours before cooking. If you want a spicier kick, you can add a tablespoon of sriracha or red pepper flakes to the sauce. Using chicken thighs will give a juicier and more flavorful result. You can switch things up by adding vegetables to the slow cooker during the last hour of cooking.
