Preparation
- In a large skillet, heat a bit of oil over medium heat.
- Add the ground beef, onions, salt, and pepper. Cook until the beef is browned and fully cooked.
- Lay out the tortillas on a flat surface. On one half of each tortilla, add a layer of cooked beef, cheese, tomatoes, and pickles.
- Fold the tortillas over to create a half-moon shape.
Cooking
- In the same skillet, add a little more oil.
- Cook the quesadillas on both sides until golden brown and crispy, about 2-3 minutes per side.
- Slice into wedges and serve warm.
Notes
Serve hot with your favorite dipping sauces, such as salsa, sour cream, or guacamole. You can also add jalapeƱos or avocado for extra flavor. For storage, let them cool completely and refrigerate in an airtight container for up to 3 days.
