Main Ingredients
  • 2 cups cooked rice Use day-old rice for best texture.
  • 1 can Spam, diced Any variety of Spam can be used.
  • 2 tablespoons vegetable oil For frying.
  • 3 green onions, sliced Also known as scallions.
  • 2 eggs, beaten For scrambling.
  • Soy sauce to taste Add according to your preference.
  • Salt and pepper to taste For seasoning.

Method
 

Cooking
  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the diced Spam and cook until browned.
  3. Push the Spam to one side of the skillet, and pour the beaten eggs into the other side, scrambling them until cooked.
  4. Add the cooked rice and sliced green onions, mixing everything together.
  5. Season with soy sauce, salt, and pepper.
  6. Serve hot.

Notes

Serve hot in bowls or plates, and garnish with extra green onions or sesame seeds. It pairs well with steamed vegetables or salad. To store, let cool and place in an airtight container in the refrigerator for up to three days, or freeze for up to a month.
