- In a large skillet, melt butter over medium heat.
- Add diced Spam and cook until browned.
- Push the Spam to one side of the skillet and add the beaten eggs, scrambling until cooked through.
- Add the cooked rice, green peas, carrots, and corn to the skillet.
- Pour soy sauce over the mixture and stir well to combine.
- Cook for another 5-7 minutes, stirring occasionally, until everything is heated through.
- Season with salt and pepper to taste. Serve hot.
Notes
Serve hot, garnished with chopped green onions or sesame seeds. Pairs nicely with a salad or steamed vegetables. Store leftovers in an airtight container for up to 3-4 days.
