Ingredients
  

Main ingredients
  • 2 cups cooked rice Preferably day-old rice
  • 1 can Spam, diced
  • 2 large eggs, beaten
  • 1 cup green peas Frozen or fresh
  • 1 cup carrots, diced Fresh or frozen
  • 1 cup corn Fresh or canned
  • 2 tablespoons soy sauce Adjust to taste
  • 2 tablespoons butter
  • to taste Salt and pepper

Method
 

Cooking
  1. In a large skillet, melt butter over medium heat.
  2. Add diced Spam and cook until browned.
  3. Push the Spam to one side of the skillet and add the beaten eggs, scrambling until cooked through.
  4. Add the cooked rice, green peas, carrots, and corn to the skillet.
  5. Pour soy sauce over the mixture and stir well to combine.
  6. Cook for another 5-7 minutes, stirring occasionally, until everything is heated through.
  7. Season with salt and pepper to taste. Serve hot.

Notes

Serve hot, garnished with chopped green onions or sesame seeds. Pairs nicely with a salad or steamed vegetables. Store leftovers in an airtight container for up to 3-4 days.
