  • 1 lb chicken breast, diced Can be marinated in lime juice and spices for extra flavor.
  • 2 pcs chipotle peppers in adobo sauce, chopped Adjust the number according to desired spice level.
  • 1 cup heavy cream Can substitute with Greek yogurt for a lighter version.
  • 1 cup chicken broth
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped (for garnish) Add more for color and flavor.

Method
 

Cooking the Pasta and Chicken
  1. Cook the pasta according to package instructions; set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through.
  3. Add the minced garlic and chipotle peppers, sautéing for an additional minute.
Making the Sauce and Combining
  1. Pour in the chicken broth and bring to a simmer.
  2. Stir in the heavy cream and cheese, allowing the sauce to thicken slightly.
  3. Toss the cooked pasta into the skillet, mixing well to coat the pasta in the sauce.
  4. Garnish with chopped parsley and serve hot.

Notes

For storage, let cool and store in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or microwave with a splash of water or cream.
