  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 2 tablespoons chipotle in adobo sauce, minced Adjust to taste for spice level.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese You can use other types of cheese if preferred.
  • to taste Salt and pepper
  • for garnish Chopped parsley

Method
 

Preparation
  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the minced chipotle in adobo sauce, cooking for an additional minute.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the heavy cream and bring to a gentle boil.
  7. Stir in the Parmesan cheese until melted and the sauce is smooth.
  8. Toss the cooked pasta with the sauce and chicken.
  9. Serve hot, garnished with chopped parsley.

Notes

Adjust the chipotle sauce to control the spice level. Use a mix of pasta types for texture. Add vegetables like bell peppers or spinach for more flavor. Leftovers can be refrigerated for up to 3 days.
