Ingredients
  

For the beef filling
  • 1 pound ground beef
  • 1 tablespoon olive oil for cooking
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chipotle in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • to taste salt and pepper
For assembling the tacos
  • 8 small corn tortillas can substitute with flour tortillas if preferred
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 whole avocado, sliced
  • to taste fresh cilantro, for garnish
  • 1 whole lime, cut into wedges for serving

Method
 

Preparation
  1. Heat the olive oil in a large pan over medium heat.
  2. Add the diced onion and cook until soft and translucent.
  3. Add the minced garlic and cook for another minute.
Cooking the beef
  1. Stir in the chipotle in adobo sauce, ground cumin, smoked paprika, and chili powder. Mix well and allow the spices to cook for a couple of minutes.
  2. Add the ground beef to the pan, breaking it apart as it cooks. Season with salt and pepper.
  3. Cook until browned and fully cooked, about 7 to 10 minutes.
Assembling the tacos
  1. Warm the corn tortillas in a separate pan or microwave.
  2. Fill each tortilla with the chipotle beef mixture and top with shredded lettuce, diced tomatoes, cheese, avocado slices, and fresh cilantro.
  3. Serve with lime wedges on the side.

Notes

Adjust the heat by adding more or less chipotle in adobo sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the beef and warm the tortillas before serving again.
