Preparation
- Heat the olive oil in a large pan over medium heat.
- Add the diced onion and cook until soft and translucent.
- Add the minced garlic and cook for another minute.
Cooking the beef
- Stir in the chipotle in adobo sauce, ground cumin, smoked paprika, and chili powder. Mix well and allow the spices to cook for a couple of minutes.
- Add the ground beef to the pan, breaking it apart as it cooks. Season with salt and pepper.
- Cook until browned and fully cooked, about 7 to 10 minutes.
Assembling the tacos
- Warm the corn tortillas in a separate pan or microwave.
- Fill each tortilla with the chipotle beef mixture and top with shredded lettuce, diced tomatoes, cheese, avocado slices, and fresh cilantro.
- Serve with lime wedges on the side.
Notes
Adjust the heat by adding more or less chipotle in adobo sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the beef and warm the tortillas before serving again.
