  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1/2 cup olives, sliced Any variety of olives works.
  • 2 tbsp capers
  • 2 tsp Italian herbs (such as oregano and basil)
  • 1-2 tsp red pepper flakes Adjust for spice level.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) or set your slow cooker.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the chicken to the skillet and season with salt, pepper, Italian herbs, and red pepper flakes. Cook until the chicken is browned on all sides.
Cooking
  1. In a casserole dish (or slow cooker), layer the diced tomatoes, olives, capers, and the browned chicken.
  2. If using the oven, cover with foil and bake for 35-40 minutes, or until chicken is cooked through. If using a slow cooker, cook on low for 4-6 hours.
