Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Add minced garlic, chopped mushrooms, and spinach; sauté until mushrooms are cooked and spinach is wilted.
- Remove from heat and mix in cheese. Season with salt and pepper.
Cooking
- Cut a pocket in each chicken breast and stuff with the spinach and mushroom mixture.
- Place stuffed chicken breasts in a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes or until chicken is cooked through.
Serving
- Serve warm with a side of rice, mashed potatoes, or a fresh salad. A light drizzle of balsamic glaze can add extra flavor.
Notes
Leftovers can be stored in the refrigerator for up to 3 days in an airtight container, or frozen for up to 3 months. Thaw in the fridge before reheating. Add herbs such as basil or Italian seasoning for extra taste.
