Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the spinach, roasted red peppers, mozzarella cheese, minced garlic, salt, and pepper.
  3. Cut a pocket into each chicken breast and stuff it with the spinach mixture.
  4. Place the stuffed chicken in a baking dish and drizzle with olive oil.
