  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 cup sweet and sour sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced garlic
  • 1/2 teaspoon ground ginger
  • 1/4 cup chopped green onions for garnish

Method
 

Preparation
  1. Place the chicken breasts in the crock pot.
  2. In a bowl, mix together the pineapple chunks, sweet and sour sauce, soy sauce, brown sugar, garlic, and ginger.
  3. Pour the mixture over the chicken in the crock pot.
Cooking
  1. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  2. Before serving, shred the chicken with two forks and stir to combine it with the sauce.
  3. Garnish with chopped green onions and serve over rice.

Notes

To store leftovers, let the chicken cool down to room temperature. Place it in an airtight container and keep it in the refrigerator for up to 4 days. You can also freeze it for longer storage. Just make sure to use a freezer-safe container. Thaw in the fridge before reheating. You can adjust the level of sweetness by adding more or less brown sugar. For added flavor, marinate the chicken in soy sauce and garlic for a few hours before cooking.
