  • 2 pounds boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup teriyaki sauce Use gluten-free if necessary
  • 1/2 cup bell pepper, sliced
  • 1/2 cup onion, sliced
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • to taste Salt and pepper

Method
 

Preparation
  1. Place the chicken thighs in the slow cooker.
  2. Add pineapple chunks, teriyaki sauce, sliced bell pepper, sliced onion, minced garlic, and minced ginger on top of the chicken.
  3. Season with salt and pepper to taste.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and cooked through.
  2. Shred the chicken and stir to combine with the sauce before serving.

Notes

Serve over steamed rice or noodles and garnish with fresh cilantro or green onions. Can store leftovers in an airtight container for 3-4 days in the refrigerator or freeze for 2-3 months. Marinating the chicken overnight in teriyaki sauce can enhance flavor. Add vegetables like carrots or snap peas for variation.
