  • 8 oz pasta shells Use any pasta shells you prefer.
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 1 packet taco seasoning Adjust for spiciness to taste.
  • 1 cup sour cream For a lighter option, use Greek yogurt.
  • 1 cup shredded cheese Cheddar or a blend work great.
  • 1 can diced tomatoes with green chilies Add more or less based on preference.
  • 1 cup water Necessary for cooking pasta.
  • Salt and pepper to taste Season to your liking.
  • Chopped green onions for garnish Optional, for serving.

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add taco seasoning, diced tomatoes, and water; bring to a simmer.
  3. Stir in pasta shells; cover and cook for about 10-12 minutes until pasta is tender.
  4. Lower the heat and mix in sour cream and shredded cheese until melted and creamy.
  5. Season with salt and pepper to taste.
  6. Serve warm, garnished with chopped green onions.

Notes

For additional toppings, consider salsa, avocado, or cilantro. Pairs well with side salads or tortilla chips.
