- In a bowl, mix ground chicken, breadcrumbs, egg, garlic, ginger, soy sauce, coriander, cumin, salt, and pepper until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
Cooking
- In a large skillet, heat a splash of oil over medium heat. Add the meatballs and cook until browned all over, about 8-10 minutes.
- In the same skillet, add the coconut milk and red curry paste. Stir to combine and let simmer for about 5 minutes.
- Add the meatballs to the curry sauce and cook for an additional 5-10 minutes until cooked through.
Serving
- Serve hot, garnished with fresh cilantro.
Notes
For extra flavor, add chopped green onions or a splash of lime juice. For a spicier dish, increase the amount of red curry paste or add fresh chili peppers.
