  • 1 pound chicken breasts, cut into bite-sized pieces You can use chicken thighs for a different flavor.
  • 1 cup creamy peanut butter Crunchy peanut butter can be used for added texture.
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked rice for serving Serve hot over rice.

Preparation
  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth.
Cooking
  1. Heat a large skillet over medium heat and add chicken pieces. Cook until browned and cooked through, about 5-7 minutes.
  2. Pour the peanut sauce over the cooked chicken, stirring to coat. Let it simmer for 3-5 minutes, allowing the sauce to thicken slightly.
  3. Season with salt and pepper to taste.
Serving
  1. Serve hot over cooked rice and garnish with chopped green onions.

Notes

For added crunch, consider sprinkling some chopped peanuts on top before serving. You can also add vegetables like bell peppers or broccoli for added nutrition.
