Ingredients
  

For the marinade
  • 2 tablespoons lemongrass, minced Finely minced for better flavor absorption.
  • 3 cloves garlic, minced Finely minced for better flavor absorption.
  • 3 tablespoons fish sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
Main ingredients
  • 4 pieces chicken thighs Can substitute with chicken breast or drumsticks.

Method
 

Marinating
  1. In a bowl, combine minced lemongrass, minced garlic, fish sauce, vegetable oil, sugar, and black pepper.
  2. Add the chicken thighs to the marinade and mix well. Let it marinate for at least 30 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Grill the chicken thighs for about 6-8 minutes on each side, or until golden brown and cooked through.

Notes

Leftover Vietnamese Lemongrass Chicken can be stored in an airtight container in the refrigerator for up to three days or frozen for up to three months. Thaw in the fridge before reheating. Marinade the chicken overnight for the best taste, and add chopped chili peppers to the marinade for extra spice.
