Ingredients
  

For the Marinade
  • 1/4 cup fresh lemon juice
  • 4 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped Dried oregano can be used, but use less.
  • 1/4 cup olive oil
  • to taste Salt and pepper
For the Chicken
  • 4 pieces chicken (legs or breasts) Boneless chicken can be used, but it will cook faster.

Method
 

Preparation
  1. In a bowl, mix lemon juice, garlic, oregano, olive oil, salt, and pepper.
  2. Add chicken pieces and marinate for at least 30 minutes, or up to overnight in the refrigerator.
Cooking
  1. Preheat your grill to medium-high heat.
  2. Grill the chicken for about 6-8 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.
  3. Let the chicken rest for a few minutes before serving.

Notes

Serve hot with a fresh salad, grilled vegetables, or rice. A squeeze of extra lemon on top enhances flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
