  • 2 pieces chicken breasts, diced Cut into uniform pieces for even cooking.
  • 100 g chorizo, sliced
  • 1 piece red capsicum, chopped
  • 1 piece yellow capsicum, chopped
  • 2 pieces tomatoes, chopped
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika Adjust according to your taste preference.
  • to taste Salt and pepper
  • 2 tablespoons Olive oil for cooking
  • to taste Fresh herbs (e.g., parsley or basil) for garnish

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and minced garlic, sautéing until softened.
  3. Add the sliced chorizo to the skillet and cook until it starts to brown.
  4. Add the diced chicken, cooking until browned on all sides.
  5. Stir in the chopped capsicum and tomatoes, and season with smoked paprika, salt, and pepper.
  6. Cover and simmer for about 15-20 minutes until the chicken is cooked through and the vegetables are tender.
  7. Garnish with fresh herbs and serve hot.

Notes

Serve with rice, quinoa, or crusty bread. A side salad complements the dish nicely. For a special touch, serve in bowls with extra fresh herbs.
