  • 1 cup bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 2 pieces eggs beaten

  • to taste pepper
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine bread crumbs and grated Parmesan cheese.
  3. Season chicken breasts with salt and pepper.
  4. Dip each chicken breast in beaten eggs, then coat with the bread crumb mixture.
Cooking
  1. In a skillet, heat olive oil over medium heat and fry the breaded chicken until golden brown on both sides.
  2. Place the fried chicken in a baking dish.
  3. Top each piece of chicken with marinara sauce and mozzarella cheese.
  4. Bake in the preheated oven for about 20 minutes until cheese is melted and bubbly.
Serving
  1. Garnish with fresh basil if desired and serve with pasta or salad.

Notes

For extra flavor, add herbs like oregano or basil to the bread crumb mixture. Make sure the oil is hot before frying the chicken for a perfect crisp. Use homemade marinara sauce for a richer taste or choose your favorite store-bought brand. Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in the oven at a low temperature until warmed through.
