  • 4 pieces Chicken cutlets
  • 1 cup Bread crumbs Use fresh for best results.
  • 2 large Eggs Beaten.
  • 1 cup Flour All-purpose flour or gluten-free if needed.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cups Marinara sauce Store-bought or homemade.
  • 1 cup Mozzarella cheese Fresh mozzarella preferred.
  • 1/2 cup Parmesan cheese Grated.
  • 8 ounces Spaghetti or zucchini noodles For serving.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Set up a breading station with flour, beaten eggs, and bread crumbs.
  3. Season the chicken cutlets with salt and pepper, then dredge them first in flour, then in egg, and finally in bread crumbs.
Cooking
  1. Heat oil in a skillet over medium heat and fry the breaded chicken until golden brown on both sides.
  2. Place the fried chicken on a baking dish, top each piece with marinara sauce and mozzarella cheese.
  3. Bake for 15-20 minutes or until the cheese is melted and bubbly.
Serving
  1. Serve hot and fresh from the oven over cooked spaghetti or zucchini noodles.
  2. Sprinkle with extra parmesan cheese and fresh herbs like basil or parsley for added flavor.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat in the oven or microwave. For longer storage, freeze for up to 2 months.
