  • 2 tablespoons mango chutney
  • 1/4 cup dried fruit (such as raisins or apricots) Can be swapped for cranberries or chopped apple.
  • Salt and pepper to taste

Preparation
  1. In a large bowl, combine mayonnaise, curry powder, and mango chutney.
  2. Add the shredded chicken and dried fruit, stirring until everything is well coated.
  3. Season with salt and pepper to taste.
  4. Serve the coronation chicken over salad greens, in sandwiches, or wrapped in tortillas.

Notes

To store Coronation Chicken, place it in an airtight container in the fridge. It will stay fresh for up to 3 days. Consider dividing it into smaller portions to keep fresh longer.
