Ingredients
  

For the chicken
  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup cornstarch
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame seeds
For the fried rice
  • 3 cups cooked rice
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 green onions, chopped
  • Salt and pepper to taste

Preparation
  1. Cut chicken into bite-sized pieces and coat with cornstarch.
  2. In a skillet, heat sesame oil over medium heat and add the chicken. Cook until it turns golden and crispy.
  3. In a bowl, mix soy sauce, honey, rice vinegar, and sesame seeds. Pour this mixture over the chicken and stir to coat well.
Fried Rice
  1. In another pan, scramble the eggs and add the mixed vegetables.
  2. Add the cooked rice to the egg and vegetable mixture. Stir well and season with salt and pepper to taste.
Serving
  1. Serve the crispy chicken over the fried rice and garnish with chopped green onions.
  2. For a beautiful presentation, sprinkle some extra sesame seeds and green onions on top.
  3. Pair this dish with a side of soy sauce for extra flavor.

Notes

If you have leftovers, store the chicken and fried rice in separate airtight containers. They can last in the fridge for up to three days. To reheat, simply warm them in a skillet over medium heat until heated through. For a crunchier texture, avoid overcrowding the pan when frying the chicken. Consider adding red pepper flakes to the soy sauce mixture for some heat, and you can substitute chicken with tofu for a vegetarian option.
