  • 2 medium zucchinis Grated and excess moisture squeezed out
  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheese (like mozzarella or cheddar) Can substitute with vegan cheese
  • 1 large egg Can substitute with a flax egg for vegan version
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Olive oil For brushing the top

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine grated zucchini, flour, baking powder, salt, cheese, egg, garlic powder, and Italian seasoning. Mix until well combined.
  4. Spread the mixture evenly on the prepared baking sheet to form a rectangle about 1/2 inch thick.
  5. Brush the top lightly with olive oil.
Baking
  1. Bake for 15-20 minutes until golden brown.
  2. Allow to cool slightly, then cut into sticks. Serve warm.

Notes

These breadsticks are best served warm. Dip in marinara sauce, ranch dressing, or garlic butter. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 5-7 minutes.
