Ingredients
  

For the Marinade
  • 1/4 cup Fish sauce Adds depth of flavor
  • 4 cloves Garlic, minced Enhances the marinade
  • 2 stalks Lemongrass, chopped Provides a fresh citrus flavor
  • 1 each Lime, juiced Adds acidity
  • 1 tablespoon Sugar or honey Balances the flavors
For the Chicken
  • 4 pieces Chicken breasts Can substitute with thighs
For Serving
  • 2 cups Jasmine rice, cooked Serve on the side
  • 1 cup Fresh herbs (cilantro, mint) For garnish
  • 1 cup Pickled vegetables Adds crunch and flavor

Method
 

Preparation
  1. In a bowl, combine fish sauce, minced garlic, chopped lemongrass, lime juice, and sugar or honey to make the marinade.
  2. Add the chicken to the marinade, ensuring it is well-coated. Marinate for at least 30 minutes, or overnight for better flavor.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and charred.
Serving
  1. Serve hot off the grill with jasmine rice, fresh herbs, and pickled vegetables.

Notes

For added flavor, sprinkle sesame seeds or crushed peanuts on top before serving. Wrap the chicken in lettuce leaves for a fun healthy option.
