Ingredients
  

For the bowl
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 lb lean ground beef (93% preferred)
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp olive oil
  • 2 tbsp hot honey Adjust based on taste preference.
For seasoning
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, turning halfway through.
Cooking
  1. In a skillet, cook the diced onion until soft, then add the ground beef and cook until browned. Drain excess fat.
  2. Stir in taco seasoning, paprika, garlic powder, and cinnamon. Cook for a few more minutes.
Serving
  1. In bowls, layer the roasted sweet potatoes, beef, and cottage cheese. Drizzle with hot honey and top with sliced avocado.

Notes

Serve warm, straight from the kitchen. Optionally, add fresh herbs like cilantro for extra flavor. This meal is great for lunch or dinner and can be enjoyed with a side salad.
