Cooking the Potatoes
- Preheat air fryer to 400°F. Toss the diced potatoes with olive oil, salt, and pepper. Air fry for 16–18 minutes, shaking halfway through until they are golden and crispy.
Caramelizing the Onions
- Heat a skillet over medium-low with a little olive oil. Add diced onions, and cook for 10–15 minutes, stirring occasionally, until they are soft and golden. Remove and set aside.
Cooking the Beef
- In the same skillet, increase the heat to medium-high. Add the ground beef, break it up, and press it into the pan to create crispy edges. Cook for 5–7 minutes until browned. Season with salt and pepper. Drain excess fat if needed.
Making the Sauce
- In a small bowl, whisk together the mayo, ketchup, mustard, and Cajun seasoning until smooth.
Assembling the Bowls
- Add the crispy potatoes to bowls, top with beef, caramelized onions, and shredded cheese. Drizzle with the special sauce and finish with lettuce and any optional toppings.
Notes
To store leftovers, keep components separately in airtight containers in the fridge. The crispy potatoes can lose their crunch if stored with moist ingredients. They should be eaten within 3-4 days for the best taste and texture.
